Avocado banana popsicles

Yes, I’m still obsessed with avocados! Bananas go really well with avocados and I’m getting very addicted to these simple sweets with avocados. However, after tasting both the avocado/banana and the avocado/pineapple popsicles side-by-side, I prefer the latter as pineapple is my favorite fruit! The banana version is of course, a much cheaper alternative!
Note that I didn’t freeze the coconut milk this time as I hadn’t plan to eat it right away! Using ice cubes made from coconut milk will give a thicker consistency, like a sorbet.
Ingredients
- 2 avocados, shelled and pitted
- 2 ripe bananas
- 1 small can of coconut milk, about 165ml
- Juice of 1 lemon or lime
- 3 tbsp sugar
Method
Step 1
Blend all ingredients together
Step 2
Adjust the sweetness and tartness according to preference
Step 3
Blend again until well mixed
Step 4
Spoon into popsicle containers, ensuring that there are no air bubbles by tapping the containers on the counter (otherwise you end up with popsicles looking like mine)
