I just discovered a new cook book called the Flavor Bible. It’s becoming my favorite cook book because there’s so much new there. My last recipe was a typical Vietnamese shake made from avocado and I wanted to see if I could make it more exciting by combining different ingredients. What did I see in the book but avocado and pineapple being a match made in heaven? Hope you like it too!
Ingredients
- 1 pineapple, peeled and cut into pieces
- 2 avocados, peeled and pitted
- 3 tbsp lime juice
- 6 ice cubes of coconut milk
- 150 mL sugar (more according to taste)
Method
Step 1
Combine all ingredients in a blender and blitz until smooth
Step 2
Adjust the sweetness and tartness
Step 3
Blend until well mixed
Step 4
Place into popsicle containers (makes 18 popsicles) or into an icecream maker and then into the freezer
