Bitter melon with eggs

Bitter melon is an acquired taste! I used to hate it as a child but lately, I can’t get enough of them! Bitter melon works well in a soup or stew or with eggs which balance out the bitterness.
This dish is pretty basic and you can convert it into a vegetarian dish by the omission of ground pork.
Ingredients
- 1 bitter melon, about 300g
- 4 eggs, beaten
- 200g ground pork
- 1 tbsp soy sauce
- pinch of sugar
- salt and pepper to taste
Method
Step 1
Cut the melon in half, lengthwise. Discard the seeds and pulp. Slice about 1mm in thickness.
Step 2
Blanch the melons in boiling water for 3-5 minutes, depending on how much bitterness you want to retain (more cooking time reduces the bitterness but don't overcook the melons to mushiness). Drain the melons
Step 3
Fry the ground pork and discard any fat!
Step 4
Add the melons and beaten eggs and mix well
Step 5
Season with soy sauce, sugar, salt and pepper
Step 6
Serve with steamed rice.
