Boquerones (marinated anchovies)


Boquerones is one of my favorite tapas, on the same scale as gambas al ajillo. It is marinated anchovies and super easy to make. Being in Sweden, herring is more easily available than anchovies and the result as just as good!

Make sure you get filleted herrings as this will make your life easier. Freeze the fillets for at least 3 hours to kill any parasite present.


  • 250g filleted herring
  • 1dL cider vinegar
  • 1dL white wine vinegar
  • 1 teaspoon salt
  • 2 cloves of finely chopped garlic
  • 1/2 teaspoon chili flakes
  • Freshly cracked black pepper
  • 1 dL olive oil
  • 2 tablespoons of chopped parsley


Step 1

Freeze the herring for approx. 3 hours to kill any parasite present. Unthaw at room temperature.

Step 2

Combine the vinegars and salt. Add in the herring and marinade until the herrings turn white, about 2-3 hours. Remove the fish from the marinate.

Step 3

Using a glass dish, add the herring, garlic, chili, parsley and olive oil and allow to marinate for at least 1 hour.

Step 4

Serve with crusty bread.
