We recently made this for a potluck and it was a big hit! They’re very addictive and hard to stop eating once you start.
- 1 egg white
- 1 tablespoon water
- 500gr whole almonds
- 250mL sugar
- 3/4 tsp salt
- 1 tsp ground cinnamon
- chili flakes (optional)
Preheat the oven to 150 degrees Celsius. Line a baking sheet with baking paper.
In a mixing bowl, whisk together the egg white and water until frothy.
In a separate bowl, mix together sugar, salt and cinnamon. Transfer the sugar mixture to a 3L plastic bag.
Add the almonds to the egg mixture and stir to coat the nuts evenly.
Remove the almonds from the wet mixture and put them in the sugar bag. Shake the bag until the nuts are thoroughly coated with the sugar mixture.
Remove the nuts from the sugar bag shaking off the excess sugar as much as possible and placed in a single layer on the lined baking sheet. Sprinkle with a pinch of chili flakes (optional).
Bake at 150 degrees Celsius for about 30 minutes. Remove the tray from the oven and give the nuts a stir. Place back into the oven and bake for another 30 minutes.
Remove from the oven and allow to cool for about 30 minutes. Go nuts! 😀
