Cheese quesadilla

 This is an easy appetizer to make when kitchen facilities are limited. No oil splashes, no mess, makes great use of leftover meats and is heavenly comforting to eat!

Ingredients

  • 1 packet of soft, flour tortillas (8 tortillas)
  • 100g finely sliced spring onions
  • 250g grated cheese
  • 2 finely chopped red chilies (optional)

Method

Step 1

Place a tortilla in a dry frying pan on medium heat. Flip over the tortilla a few times so that both sides are warmed through and air pockets begin to form.

Step 2

Sprinkle cheese, green onions and chilies over the whole tortilla Reduce heat to low.

Step 3

When the cheese has melted and the bottom is golden brown, (not burnt), fold the tortilla in half Remove from the heat and cut into wedges Serve warm.

Note: you can turn this dish into a main dish by adding meat to it – ground beef, pork, shredded cooked chicken, etc. My favorite filling is portobello mushroom and spinach with a hint of nutmeg. Yum!
