Chili pepper water

I discovered chili pepper water when I was researching for a trip to Hawaii. Apparently, this is common on the islands and always on hand at restaurants. It’s a cheap way to make hot sauce and requires few ingredients, just chilies, water, vinegar and salt! Use as a hot sauce on your food!

I’ve used white bird’s eye chilies here.

Ingredients

  • 900mL hot water
  • 5-10 bird's eye chilies
  • 1 tablespoon of salt
  • 1 tablespoon of white vinegar
  • 2 cloves of garlic, slightly crushed (optional)

Method

Step 1

Sterilize a 1L bottle or glass jar by washing it in the dishwasher and in a hot oven at 100 Celsius for 15 minutes.

Step 2

Place the chilies, salt, vinegar and garlic in the container.

Step 3

Pour the hot water into the container and allow to cool to room temperature.

Step 4

Store in the fridge for at least a week before use.

Step 5

Use as a hot sauce on your food.
