Cut-the-grease Carolina bbq sauce

We’ve been watching alot of Guy Fieri’s Diners, Drive-ins and Dives bbq episodes which made us crave bbq ribs so much that we had to try our hands at it ourselves. This was my first meal after a week of involuntary liquid diet!
Of course you can’t have bbq without a sauce and we’re so glad that we discovered this vinegary sauce as it cuts the grease so well that one could finish up one’s slab of ribs without any problem. I based my sauce on the one from an Eastern North Carolina bbq sauce from Allrecipes and add a few twists of my own.
Ingredients
- 250ml white vinegar
- 250ml cider vinegar
- 1 tbsp brown sugar
- 1 tbsp ketchup
- 1 tsp Worcestershire sauce
- 2 tbsp homemade chili sauce*
- 1 tsp freshly ground black pepper
- 1 tsp salt
Method
Step 1
Mix all ingredients until the salt and sugar are dissolved.
Step 2
Store in the fridge overnight before use to allow the sauce to mature.
Step 3
Enjoy with your favorite bbq meat!
