This salsa is so good that everyone goes for it as soon as I put it out – hence the name ;). It is a basic salsa that goes with just about anything! As it is here with tortillas or with grilled meats and wrapped in tortillas. YUM!
- 250g cherry tomatoes
- 2 onions, quartered
- 1 habanero pepper or milder chilies
- 3 tbsp lime juice or lemon juice
- 1/2 tsp salt
- 50g chopped coriander
Preheat the oven to 200 Celsius
Rub the tomatoes, onions, and pepper with olive oil and bake in the oven for about 20 minutes or until the tomatoes or onions are a bit burnt.
Blitz in a food processor along with the rest of the ingredients until the desired consistency.
Taste and adjust the lime and salt.
Serve with tortilla chips or as a sauce to your favorite Mexican dishes!
