Homemade cinnamon icecream2014-06-30
The smell of cinnamon permeates the kitchen when you’re making this dessert. This is one dessert that just screams comfort food!
This recipe has very few ingredients but the taste is heavenly! I use lactose free milk products because I’m lactose intolerant but you can use the normal products without affecting the end result.
- 4 eggs
- 2.5 dL sugar
- 5dL lactose free milk
- 4dL lactose free cream
- 4 sticks of cinnamon
Add the milk and cinnamon sticks to a saucepan and bring a boil on medium heat.
Remove from the heat source and allow the cinnamon to steep in the milk for one hour.
Discard the cinnamon.
Beat the eggs and sugar together in another pot.
Add the milk to the egg mixture and mix well.
Warm up the milk mixture on low heat, whisking constantly until the mixture has thickened.
Allow the mixture to cool to room temperature.
Add the cream and mix well.
Pour the milk mixture into an ice cream machine and follow the manufacturer's instructions.
Serve with ginger biscuits or lemongrass poached pears.
