This dish is named after the key limes in Florida and the main ingredient is duh, key limes. Well, these are non-existent in Sweden but no matter, a combination of lemons and limes works well enough . Actually, the pie is scrumptious and I have to make it to Florida one day to taste the real thing!
The pie is, although scrumptious, a heavy dessert so a small serving will suffice.
- 2 cans of 397g sweetened condensed milk
- 125ml of lime juice
- 125ml of lemon juice
- 5 egg yolks
- Zest of the limes
Combine all ingredients in a mixing bowl.
Let stand for 30 minutes.
Preheat the oven to 190 Celsius.
Strain the mixture and discard the zest.
Place the filling in a prebaked graham cracker or digestive biscuit pie crust*.
Bake in the oven for 15 - 20 minutes or until tiny bubbles appear on the pie surface.
Allow to cool at room temperature before chilling in the fridge. Serve chilled.
