Key lime pie

This dish is named after the key limes in Florida and the main ingredient is duh, key limes. Well, these are non-existent in Sweden but no matter, a combination of lemons and limes works well enough ;) . Actually, the pie is scrumptious and I have to make it to Florida one day to taste the real thing! :)

The pie is, although scrumptious, a heavy dessert so a small serving will suffice.

Ingredients

  • 2 cans of 397g sweetened condensed milk
  • 125ml of lime juice
  • 125ml of lemon juice
  • 5 egg yolks
  • Zest of the limes

Method

Step 1

Combine all ingredients in a mixing bowl.

Step 2

Let stand for 30 minutes.

Step 3

Preheat the oven to 190 Celsius.

Step 4

Strain the mixture and discard the zest.

Step 5

Place the filling in a prebaked graham cracker or digestive biscuit pie crust*.

Step 6

Bake in the oven for 15 - 20 minutes or until tiny bubbles appear on the pie surface.

Step 7

Allow to cool at room temperature before chilling in the fridge. Serve chilled.

*Digestive biscuit pie crust

Note: you can use the leftover egg whites in bitter melon with eggs, snake beans with ground pork and eggs, or candied almonds.
