This is a great dish for those days when you’re craving comfort dish but can’t be bother to spend alot of time in the kitchen. This dish is super quick to make with just 2 ingredients, rice and kimchi or you can spice it a notch with meat, spring onions, garlic, guchujang, eggs, etc. Try to fry it in a cast-iron pan so that the rice is crispy at the bottom.
Fried rice should be made with leftover steamed rice as the grains will have dried out a bit from being in the fridge. If you’re cooking rice the same day, make sure to use less water so that the grains are almost al dente but the end product will be delish!
- 2 cups cooked plain rice
- 1 cup kimchi, chopped
- 3 tablespoons kimchi juice
- 1 tablespoon guchujang (optional)
Heat up a cast-iron pan and add 1 tablespoon vegetable oil.
When the oil is hot, add the kimchi and stir-fry for a few minutes.
Add the cooked rice and kimchi juice and combine well.
Add the guchujang and mix well.
Serve as is or with banchans.
