Light and fluffy banana bread

I know eh? Banana bread isn’t known for being light and fluffy but I guarantee you that this recipe from the Guardian fits the bill! I’ve reduced the amount of sugar and it still tastes great!
I was surprised to find this article and that there was so much controversy around this sweet!
Ingredients
- 4 medium size overriped bananas
- 180 g flour
- 2.5 teaspoons baking powder
- 1/2 teaspoon salt
- 2 eggs, beaten
- 4 tablespoons melted butter
- 130g brown sugar
- 60g of walnuts, coarsely chopped
Method
Step 1
Preheat the oven to 170 degrees Celsius.
Step 2
Peel the bananas and mash them with a fork.
Step 3
Sift the dry ingredients into a small bowl. Set aside.
Step 4
Combine the eggs, sugar and butter and beat with a mixer until well blended. Add the mashed bananas and mix well.
Step 5
Fold the dry ingredients into the egg mixture until the flour is blended in. Don't overfold as this can make the bread heavy and dense.
Step 6
Fold in the walnuts.
Step 7
Grease a loaf pan with butter. Pour the batter into the loaf pan.
Step 8
Bake for 1 hour or until the center is cooked. To test for doneness, stick a toothpick into the center and if it comes out clean, the bread is done.
