Rosemary mixed nuts

I got this recipe from the Food Network’s Best Thing I Ever Ate – Nuts and Giada de Laurentiis was going on about these nuts that she had at the Union Bar or something like that.  I’ve tried to follow the recipe on the show and I hope I haven’t forgotten any ingredient.  I couldn’t stop eating this once it has cooled.

One thing I would change is that I’ll leave the rosemary whole next time and not chop it. I blame it on old age! ;)

Ingredients

  • 500g of your favorite nuts
  • 2 tbsp fresh rosemary
  • 1 tbsp melted butter
  • 1 tbsp cayenne pepper
  • 1 tbsp brown sugar
  • 1 tsp salt

Method

Step 1

Preheat the oven to 190 degrees Celsius.

Step 2

Warm the nuts for 10 minutes in the oven.

Step 3

In the meantime, mix together the rosemary, salt, sugar and cayenne.

Step 4

Transfer the nuts to a mixing bowl and add the melted butter. Toss to coat evenly.

Step 5

Add the rosemary mixture to the nuts and toss to coat.

Step 6

Serve warm or at room temperature.
