Snake bean with ground pork and eggs

Snake bean or Chinese long bean has a chewy, crispy texture that is very different from haricot vert. You could substitute haricot vert for the dish but if you ever see this bean, treat yourself to a new taste sensation.
You can make a vegetarian version of this dish by omitting the pork!
Ingredients
- 200g snake bean, cut into 3mm long pieces
- 250g ground pork
- 4 beaten eggs
- 1 tbsp light soy sauce
- Pinch of sugar
- Salt and pepper to taste
Method
Step 1
Heat a wok on high. Brown the pork and drain off the fat.
Step 2
Add the beans and cook until al dente.
Step 3
Add the eggs and mix well.
Step 4
Add the soy sauce and sugar. Mix well Add salt and pepper to taste.
Step 5
Serve with steamed rice.
