Superior onion rings


I had already posted a recipe for crispy onion rings a while back. There’s nothing wrong with this recipe but sometimes, I’m in the mood for a thicker crust on the onion, hence this latest version. It has two coats of starch and therefore a thicker coating. Both recipes are perfect, it just depends on your mood.


  • 2 onions, peeled and cut into 2cm thick rounds
  • 250mL buttermilk (lättfil) or enough to coat the onions
  • 250mL cornstarch or potato starch or enough to coat the onions
  • 375mL cornmeal or enough to coat the onions


Step 1

Separate onion layers, soak in buttermilk

Step 2

Dredge in potato starch, then dip in buttermilk, then dredge again in corn flour.

Step 3

Shake off excess, deep fry for a few minutes until golden.

Step 4

Let dry on kitchen towel, sprinkle with salt, and serve with ketchup. Major Yum!
