Superior onion rings2015-01-19
I had already posted a recipe for crispy onion rings a while back. There’s nothing wrong with this recipe but sometimes, I’m in the mood for a thicker crust on the onion, hence this latest version. It has two coats of starch and therefore a thicker coating. Both recipes are perfect, it just depends on your mood.
- 2 onions, peeled and cut into 2cm thick rounds
- 250mL buttermilk (lättfil) or enough to coat the onions
- 250mL cornstarch or potato starch or enough to coat the onions
- 375mL cornmeal or enough to coat the onions
Separate onion layers, soak in buttermilk
Dredge in potato starch, then dip in buttermilk, then dredge again in corn flour.
Shake off excess, deep fry for a few minutes until golden.
Let dry on kitchen towel, sprinkle with salt, and serve with ketchup. Major Yum!
